5oz self raising flour
4.5oz castor sugar
1 teaspoon baking powder
6 tablespoons of corn oil
2 tablespoons milk.
A little liqueur, (Grand Marnier, Amaretto etc.) hot water and cake decoration, icing sugar and butter for butter cream, to suit.

Simple 2 minute quick and easy sponge cake or cakes.
- Mix together all the ingredients in a mixing bowl for 2 mins with electric whisk, and then bake in two sandwich tins, greased, for about 20 mins at 175°C. Or put into individual cupcake papers in patty tins.
- Brush sponge with a little liqueur watered down with a little boiling water and then sandwich with jam or butter cream and ice with butter cream or fondant or glace icing and decorate.
