75g (3 oz) unsalted butter225g (8 oz) digestive biscuits, crushed350g (12 oz) ricotta cheese350g (12 oz) cream cheese200ml (7 floz) crème fraîche350g (12 oz) caster sugar45ml (3 tbsp) vanilla extractgrated rind and juice of2 lemons3 eggs, beaten15ml (1tbsp) cornflour100g (4 oz) blackberries15-30ml (1- 2tbsp) clear honey5ml (1tsp) Cointreau®150g (5 oz) blueberries

recipe created using a Kmix stand mixer.
It all turned out to be a round circle, with a very very massive structure and texture. Very hard to eat because of that, and overly tastey of lemon. I think this may boil down to the 2 hour cooking time, and letting it cool off in the turned off oven. Not fresh tasting in any way even after being chilled overnight.
Wonderful pudding, has raised many oohs and yums at my dinner table!
