250ml buttermilk
2 tbsp vegetable oil
2 eggs200g flour
2 tsp baking powder
1 tsp bicarbonate of soda
1 tbsp sugar

Maple syrup
Icing sugar to dust

Serves: 4
Prep Time: 10 minutes
Cooking Time: 10 minutes
Tools: Flat pan


  1. Attach the K beater and pour the milk,oil and eggs into the bowl and mix togetheron a medium speed.
  2. Add the flour, baking powder, soda andsugar to the bowl mix gently until everything isjust combined. It should still be a little lumpy.
  3. Heat a fl at pan with a little oil and spoon inenough batter to make an 8cm pancake. Cookfor a couple of minutes until bubbles start toappear on the surface.
  4. Flip over with a spatula and cook for a further2 minutes.
  5. Serve a few piled up on plate with a drizzleof maple syrup and butter then dust withicing sugar.
