1½ x 200g bars plain chocolate, broken into pieces
75ml (5 tbsp) Baileys® liqueur
45ml (3 tbsp) double cream
4 large eggs, separated
50g (2oz) caster sugar
cocoa powder, to decorate

Hand Mixer recipe for Irish Chocolate Mousses.

Preparation Time: 15 minutes
Cooking Time: 5 minites
Serves: 6 people


  1. Place the chocolate, Baileys® and cream in a small saucepan and heat until chocolate is melted and well blended. Remove from the heat.
  2. Meanwhile place the egg yolks and sugar in a bowl. Using the hand mixer beat on speed 3 for approx. 30 seconds, until well blended. Add the chocolate mixture and beat on speed 2 for approx. 20 seconds, until well combined.
  3. Wash the beaters and then whisk the egg whites in a clean, grease free bowl on speed 4 for approx. 1 minute, until stiff. Fold into the chocolate mixture, until well combined. Pour into six teacups. Chill for 4 hours.
  4. Dust with cocoa powder and serve with sweet biscuits.
