Blackberry Fool

  • 300g blackberries, plus a few for garnishing
  • 90g granulated sugar
  • 1 tbsp water 
  • 1 tbsp lemon juice 
  • 300 ml whipping cream 


  • Put the blackberries into a saucepan with the sugar and one tablespoon of water. Slowly bring to the boil over a low heat, until they are juicy. 
  • Push the mixture through a fine sieve to remove the seeds. Add the lemon juice and leave to cool completely. 
  • Attach the knife blade, add the blackberry mixture and purée, then remove from the bowl and reserve.
  • Attach the whisk attachment and add the whipping cream. 
  • Turn the machine to high speed and process until the cream thickens. 
  • Pour the blackberry purée into the machine. 
  • Use the pulse button in quick bursts to mix in the fruit. 
  • Pour the mixture into your serving glasses or bowls and return to the fridge for at least 2 hours before serving.
