Deliciously tender pork loins coated in in a fiery spice rub, served with a sweet and smokey charred apple sauce.
Ingredients
For the apple sauce:
3 granny smith apples, peeled & cored
Oil
1 onion
2 cloves garlic, sliced
1/2 tsp smoked paprika
Salt & pepper
1/2 tsp fennel seeds
50ml apple cider vinegar
For the spice rub:
1-2 tsp smoked paprika
1 tsp fennel seeds
1 tbsp brown sugar
1 tsp salt
1/2 tsp black pepper
For the pork:
2 pork loin chops on the bone

Method
Cut the apples in halves, then char over high heat on all sides until tender.
While the apples are cooking, heat a pan over medium heat with a drizzle of oil, then add the onion, garlic, smoked paprika, salt and pepper. Sauté until onions are tender.
Once cooled, place the charred apples in the bowl of your Kenwood food processor along with the cooked onions, a drizzle of olive oil, fennel seeds and vinegar.
Blend until mostly smooth. Set aside.
Lightly coat pork chops with oil, then coat well with the spice rub.
Grill over medium-high heat until cooked through, 6-8 minutes on each side. Leave to rest for about 5 minutes.
Spoon apple sauce onto serving plates, then place cooked pork chops on top to serve.
