Perfect alfresco finger food, Nico’s aromatic and spicy pork patties are served encased in delicious little gem lettuce leaves.

Ingredients

For the spicy pork:

400g pork mince
2 red chillis
1 onion, quartered
Handful parsley leaves
Zest from 1 lemon
1 tsp cumin seeds
1 tsp cayenne pepper
1 tsp paprika
Handful bread crumbs
Salt & pepper
Olive oil

To serve:

Baby gem lettuce leaves

Method

Place patty ingredients into the bowl of your Kenwood food processor, then pulse until onions are roughly chopped, and ingredients are mixed together.
Shape mince mixture into patties then drizzles with a bit of olive oil.
Grill over high heat until cooked through, about 5 minutes on each side.
Serve each patty in a lettuce leaf cup.
