A delicious and fruity cake, sandwiched together with fresh cream and blackberry jam. Perfect for an afternoon tea.

  1. Pre-heat oven - 170°C
  2. Line 2 clean round pans with parchment paper then set aside
  3. Fit midi blade to kCook bowl
  4. Add caster sugar, unsalted butter, egg, all purpose flour, milk and baking powder to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl with filler cap fitted
  7. Mix with filler cap fitted - 2 min, speed 12
  8. Then add blackberries to the kCook bowl
  9. Mix with filler cap fitted - 30 sec, speed 5
  10. Pour content of kCook bowl into 2 round pans evenly
  11. Bake - 30 min, 170°C
  12. Turn out onto cooling rack and let cool
  13. Clean kCook bowl
  14. Fit whisk tool to kCook bowl
  15. Add double cream to the kCook bowl
  16. Fit kCook bowl to kCook Multi
  17. Attach lid to kCook bowl with filler cap fitted
  18. Whisk with filler cap fitted - 1 min 25 sec, speed 7
  19. Transfer content of kCook bowl to large glass bowl
  20. Add half of cake to serving plate
  21. Spread cream
  22. Spread with jam
  23. Add the rest of cake to serving plate
  24. Spread cream
  25. Swirl jam into the cream
  26. Serve
