Various Dips with wafer biscuits

Enjoy these wafer biscuits with either a hummus or salsa dip.
Ingredients
Biscuits:
- 200g Plain flour
- 1 tsp Baking powder
- 50g Butter
- 4 Tbsp Cold water
- Seasoning to taste
- 2 Tbsp Flour
Hummus:
- 250g Tinned chickpeas
- 1 Garlic clove
- 50g Tahini (optional)
- 1/3 tsp Dried chilli pepper flakes
- Seasoning to taste
- 1/2 tsp Ground cumin
- 1 tsp lemon juice
- 100ml Oil
- 4 Tbsp Water
Salsa:
- 4 Fresh tomatoes
- 1/2 red onion
- 1/2 Chillies
- 20 Fresh coriander leaves
- 1 tsp Lemon juice
- Seasoning to taste
Method
Biscuits:
- Take the butter fresh from the fridge
- Cut the butter into cubes and add to the bowl
- Add the rest of the ingredients
- Process
- Dust the work surface with the flour
- Roll the pastry out into a rectangle shape, about 2mm thick
- Cut into 5 cm squares
- Line baking tray with some greaseproof paper
- Place the wafers onto the baking tray and place another piece of greaseproof paper on top
- Place another baking tray on top and place in the oven - 180C for 10minutes
Hummus:
- Drain the chickpeas
- Place all the ingredients into the bowl
- Process
Salsa:
- Attach the knife blades to the food processor
- Peel the onion and cut into quarters
- Deseed the chilli pepper
- Place all the ingredients into the food processor bowl and chop
