This flavoursome roasted courgette dip is made with courgettes, garlic, and lemon. Delicious with crackers and raw vegetables, but also perfect as a party dip.

2 Garlic Cloves
2 tablespoons Olive Oil
½ teaspoon Chili Flakes
½ teaspoon Black Pepper
½ teaspoon Salt
2 tablespoons Lemon Juice

Food processor attachment
Method
Pre-heat oven - 200°C
Line a clean baking tray with parchment paper
Place courgette on the baking tray
Roast - 40 min, 200°C
Fit the Knife Blade to the Food Processor attachment
Transfer roasted vegetables to Food processor attachment
Add garlic clove, olive oil, chili flakes, black pepper, salt and lemon juice to the Food processor attachment
