Roasted Courgette Dip

This flavoursome roasted courgette dip is made with courgettes, garlic, and lemon. Delicious with crackers and raw vegetables, but also perfect as a party dip.
Ingredients
- 6 Courgettes
- 2 Garlic Cloves
- 2 tablespoons Olive Oil
- ½ teaspoon Chili Flakes
- ½ teaspoon Black Pepper
- ½ teaspoon Salt
- 2 tablespoons Lemon Juice

- Parchment paper
- Baking tray - large
- Food processor attachment
Method
- Pre-heat oven - 200°C
- Line a clean baking tray with parchment paper
- Place courgette on the baking tray
- Roast - 40 min, 200°C
- Fit the Knife Blade to the Food Processor attachment
- Transfer roasted vegetables to Food processor attachment
- Add garlic clove, olive oil, chili flakes, black pepper, salt and lemon juice to the Food processor attachment
- Mix until smooth
- Remove the attachment from the machine
- Serve
