Seeded Bread Rolls

These sunflower and poppyseed rolls are simple to make and satisfying, served warm they make a great accompaniment to soups and cheeses. You can use any combination of seeds for this recipe so don't be afraid to experiment.

Ingredients

Ingredients 1 
Water  700 grams at room temperature
Salt  1 tsp. 
Dried yeast  1 tsp. 
Sunflower seeds  2 Tbsp. 
Strong flour  200 grams 
Wholemeal flour  800 grams 
 
Ingredients 2 
Sunflower seeds  1 Tbsp. 
Poppy seeds  1 Tbsp. 
 
Ingredients 3 
Water  as needed

Method

Getting started 

1- Fit the Spiral dough tool to the machine. 
2- Flour a baking tray.
 
Stage 1 
 
1- Add Ingredients 1 (water, salt, yeast, sunflower seeds, strong flour, wholemeal flour) into the Mixer bowl.
2- Attach the Mixer bowl to the machine and fit the splash guard. 
3- Mix on speed 1 for 3 minutes.
4- Scrape down the bowl.
5- Mix on speed 2 for 6 minutes. 
6- Cover with plastic wrap. 
7- Leave to prove for 1 hour.
 
Stage 2 
 
1- Pre heat the oven to 220ºC.
2- Add Ingredients 2 (sunflower seeds, poppy seeds) into the small bowl.
3- Mix until combined. 
 
Stage 3 
 
1- Transfer the dough to a lightly floured surface.
2- Divide the dough into 12 equal pieces.
3- Roll each piece into a ball.
4- Brush the dough balls with Ingredients 3 (water).
5- Dip the dough balls into the small bowl.
6- Place the dough balls onto the large baking tray.
7- Bake for 15 minutes at 220ºC.
8- Leave to cool on a wire rack.
9- Serve.
