A Piadina is an Italian flatbread which is quick to make as it contains no yeast and is cooked in a frying pan. The dough contains basic store cupboard ingredients and can be made with either lard or olive oil. They can be folded and filled with any toppings for breakfast, lunch and dinner. This recipe has a quick spiced prawn filling with cooling yoghurt, coriander and fresh lemon.

  1. Attach the Dough Tool
  2. Add plain flour, baking powder, salt, olive oil and milk to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 1 min, Speed Min
  5. Mix with splashguard fitted - 5 min, Speed 1
  6. Remove the Dough Tool
  7. Cover with kitchen towel
  8. Let rest - 20 min
  9. Pre-heat a clean frying pan - medium-high heat
  10. Transfer dough to lightly floured surface
  11. Divide into 4 equal pieces
  12. Shape into balls
  13. Take one piece of dough
  14. Roll out into a circle
  15. Place shaped dough on frying pan
  16. Cook each side until golden brown - 5 min
  17. Transfer bread to plate
  18. Cover with foil then set aside
  19. Repeat the same with the remaining dough pieces
  20. Clean Cooking Chef bowl
  21. Attach the Stir Tool
  22. Add vegetable oil to the Cooking Chef XL Bowl
  23. Heat with splashguard fitted - 2 min, 120°C, Speed OFF
  24. Then add tikka curry paste to the Cooking Chef XL Bowl
  25. Cook with splashguard fitted - 1 min, 120°C, Stir 2
  26. Cook with splashguard fitted - 2 min, 110°C, Stir 2
  27. Then add tomato to the Cooking Chef XL Bowl
  28. Cook with splashguard fitted - 3 min, 110°C, Stir 2
  29. Then add king prawn, coriander and lemon juice to the Cooking Chef XL Bowl
  30. Cook with splashguard fitted - 4 min, 120°C, Stir 3
  31. Add natural yogurt, coriander, fresh mint, lemon juice, salt and black pepper to a clean small bowl
  32. Stir until combined then set aside
  33. Warm the flatbread gently in a hot pan to soften
  34. Fill with mixed salad leaves
  35. Top with the prawns and yogurt sauce
  36. Garnish with coriander and lemon
  37. Serve
