A Piadina is an Italian flatbread which is quick to make as it contains no yeast and is cooked in a frying pan. The dough contains basic store cupboard ingredients and can be made with either lard or olive oil. They can be folded and filled with any toppings for breakfast, lunch and dinner. This recipe has a quick spiced prawn filling with cooling yoghurt, coriander and fresh lemon.
