No Bake Cheesecake

Ingredients
- 50g Butter
- 8 Digestive biscuits
- 220g Cream cheese
- 400g Whipping cream
- 50g Sugar
- 2 tsp Vanilla extracts
Method
Cheesecake base:
- Melt the butter
- Place the digestive biscuits into the food processor
- Process until they are broken up into small crumbs
- Add the melted butter to the biscuits
- Press the biscuits into the base of a glass
- Place in the fridge to set
Cheesecake top:
- Place cream cheese into a bowl
- Add whipping cream, sugar and vanilla extracts
- Beat until the mixture thickens (Be careful not to over beat the mixture)
- Spread the mixture evenly over the biscuit base
- Place in the fridge to set
- Remove the glasses from the fridge
- Top with your chosen sauce and serve
