Instructions

Step 1

Preheat your oven to 140C/120C fan and line a tray with parchment paper.

Step 2

Fit your Kenwood kMix stand mixer with the whisk attachment.

Step 3

Whisk the egg whites until frothy and gradually add in the caster sugar.

Step 4

Mix on full speed until thick and glossy.

Step 5

To this add the cornflour, white wine vinegar and vanilla. Mix to combine.

Step 6

Place the meringue into a piping bag and pipe a Christmas tree design on the baking tray.

Step 7

Place in the preheated oven and bake for one hour.

Step 8

Once baked, turn the oven off and allow to cool inside.

Step 9

Add the cream, vanilla and sugar to the bowl of your Kenwood kMix and whisk until thick

Step 10

Spoon this cream over the top of the cooled pavlova tree and top with mixed berries or your chosen fruit.
