Ingredients
Pavlova
- 3 large egg whites
- 150g caster sugar
- ½ tsp white wine vinegar
- ½ tsp cornflour
- Dash vanilla essence
Filling
- 250ml cream
- 1 tbsp icing sugar
- Dash vanilla essence
- 150g blueberries
- 150g raspberries
- 250g strawberries
- Mint to garnish
Method
- Preheat your oven to 140C/120C fan and line a tray with parchment paper.
- Fit your Kenwood kMix stand mixer with the whisk attachment.
- Whisk the egg whites until frothy and gradually add in the caster sugar.
- Mix on full speed until thick and glossy.
- To this add the cornflour, white wine vinegar and vanilla. Mix to combine.
- Place the meringue into a piping bag and pipe a Christmas tree design on the baking tray.
- Place in the preheated oven and bake for one hour.
- Once baked, turn the oven off and allow to cool inside.
- Add the cream, vanilla and sugar to the bowl of your Kenwood kMix and whisk until thick
- Spoon this cream over the top of the cooled pavlova tree and top with mixed berries or your chosen fruit.
