Luxury Mincemeat for Mince Pies

This is a luxury mincemeat recipe to fill your homemade mince pies at Christmas time. If you are going to go to the trouble of making your own pastry, then it is worth going the extra mile and making this luxurious filling filled with lots of dried fruit and a good quality brandy or rum. It is best to prepare it a few weeks ahead to allow the flavours to develop. Store the mixture in a large, sterilized jar until ready to use.
Ingredients
- 50g Dried Apricots
- 1 Orange
- ½ Orange
- 1 Lemon
- ½ Lemon
- 140g Cooking Apple
- 25g Glace Cherries
- ¼ teaspoon Nutmeg
- 70g Raisins
- 70g Sultanas
- 30g Currants
- 20g Dried Cranberries
- 90ml Brandy
- 90g Dark Brown Sugar
- 25g Candied Mixed Fruit
- 1 teaspoon Mixed Spice
- ½ teaspoon Ground Cinnamon
- 65g Vegetarian Suet

Method
- Attach the Stir Tool
- Add raisins, sultanas, currants, dried cranberries, dried apricots, orange, orange, lemon, lemon and brandy to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Cook with splashguard fitted until softened - 5 min, 80°C, Stir 3
- Then add cooking apple, dark brown sugar, candied mixed fruit, glace cherries, mixed spice, ground cinnamon and nutmeg to the Cooking Chef XL Bowl
- Cook with splashguard fitted until combined - 1 min, Stir 1
- Then add vegetarian suet to the Cooking Chef XL Bowl
- Mix with splashguard fitted until combined - 20 sec, Stir 1
- Transfer mixture to jar and let cool
- Serve
