Shane is serving up a fun savoury sandwich that is the perfect decadent twist for any afternoon tea. These Guinness bread with pickled cucumber sandwiches are impressive yet so simple to make.

Method

For the Guinness bread:

  1. Preheat your oven to 180°C/160°C fan. Grease and dust a 2lb loaf tin and set aside.
  2. In a small bowl, add the butter and treacle and melt in the microwave and set aside to cool slightly.
  3. In the bowl of your Kenwood mixer fitted with the kbeater, add the wet ingredients first followed by the dry and mix until combined.
  4. Spoon into the prepared tin, sprinkle some porridge oats on top and pop into the oven for 50mins.
  5. Once baked, carefully remove from the tin and pop on a wire rack to cool.

For the pickled cucumber:

  1. Cut the cucumber in half lengthways and remove the seeds from the centre.
  2. Using a peeler, peel ribbons of cucumber into a bowl and sprinkle on the salt and set aside for 20 minutes then pour off any excess liquid and add the remaining ingredients and allow to sit for 5 minutes.
     

To serve:

  1. Slice the cooled Guinness bread, you can spread on butter if you wish, top with the pickled cucumber and edible flowers.
