Created in 1953 to celebrate Queen Elizabeth II’s coronation, this classic is delicious in sandwiches, on jacket potatoes or on a salad. Serve as finger sandwiches with your afternoon tea. Add more mayonnaise if you like a creamier coronation chicken. Store in a fridge for up to 2 days.

Method

  1. Add the ingredients into the appliance bowl, fit the splashguard
  2. Cook until combined - 10 minutes, 110ºC, speed Off
  3. Then add chicken
  4. Cook until tender - 30 minutes, 110ºC, speed Off
  5. Carefully remove the chicken from the appliance bowl and place onto a cutting board
  6. Allow to cool slightly - 10 minutes
  7. Add the ingredients into a small bowl and let soak - 10 mins
  8. Cut the chicken into cubes, about 1cm, and set aside
  9. Drain the fruit and set aside
  10. Discard the liquid in the appliance bowl
  11. Clean the appliance bowl and fit the K-Beater
  12. Add cubed chicken, drained fruit and the rest of the ingredients into the appliance bowl, fit the splashguard
  13. Mix until combined - 30 seconds, speed Min
  14. Transfer to a serving bowl and top with flaked almonds
  15. Serve
