This delicious lunch/snack is a great way to use up the sad vegetable ends and bits in the back of your fridge. Made even easier with the slicer on the Kenwood Multi-pro. Here I’m using carrot, onion, cauliflower leaves and broccoli, but you can swap out for what you have to use up

Method

  1. Add the slicing attachment to your Kenwood Multipro Go compact food processor and thinly slice the vegetables through it. 
  2. Combine the vegetables in a bowl, then add the gram flour, spices, chillies, coriander, and salt.
  3. Mix well, then gradually add just enough water to create a thick batter – Heat the oil in a deep pan or pot to 180C. 
  4. Add spoonfuls of the batter to the oil, cooking about 4–5 bhajis at a time. Fry for 3–4 minutes, turning halfway through. Transfer to a plate lined with kitchen paper and keep warm in the oven while you cook the rest.
  5. Serve the bhajis hot with yoghurt or chutney
