Ready in as little as 30 minutes, Kwanghi’s delicious teriyaki chicken skewers are perfect for lunchboxes or as part of your alfresco spread.

Method

  1. Preheat your grill or broiler to medium-high heat.
  2. In a food processor, combine the ground chicken, soy sauce, sake, mirin, sugar, garlic, ginger, and black pepper. Pulse until well combined and the chicken mixture becomes smooth and homogenous.
  3. Divide the chicken mixture into 8 equal portions. Mould each portion around a skewer into an elongated shape, like a sausage.
  4. Grill or broil the skewers for 8-10 minutes, turning occasionally, or until the chicken is cooked through and slightly charred.
  5. Serve the skewers hot, garnished with sliced green onions or sesame seeds, if desired.
