Teriyaki Chicken Skewers by Kwanghi Chan

Ready in as little as 30 minutes, Kwanghi’s delicious teriyaki chicken skewers are perfect for lunchboxes or as part of your alfresco spread.
Ingredients
- 500g ground chicken
- 60ml soy sauce
- 60ml sake
- 60ml mirin
- 20g sugar
- 2 garlic cloves, peeled
- 20g fresh ginger, peeled and chopped
- 2g black pepper
- 8 bamboo skewers, soaked in water for 30 minutes

Method
- Preheat your grill or broiler to medium-high heat.
- In a food processor, combine the ground chicken, soy sauce, sake, mirin, sugar, garlic, ginger, and black pepper. Pulse until well combined and the chicken mixture becomes smooth and homogenous.
- Divide the chicken mixture into 8 equal portions. Mould each portion around a skewer into an elongated shape, like a sausage.
- Grill or broil the skewers for 8-10 minutes, turning occasionally, or until the chicken is cooked through and slightly charred.
- Serve the skewers hot, garnished with sliced green onions or sesame seeds, if desired.
