Try this twist on a classic for an easy weeknight dinner. Instant mashed potato is used to speed up the cooking time so you can have a tasty and nutritious meal on the table in 30 minutes. Add a teaspoon of chilli flakes if you like a kick and serve with steamed veg alongside.

  1. Pre-heat oven - 180°C
  2. Add instant mashed potato flakes and water to a clean medium bowl
  3. Stir until combined then set aside
  4. Assemble the Food Processor attachment to the machine
  5. Fit the knife blade to the Food Processor bowl
  6. Add onion and carrot to the Food processor attachment
  7. Attach the lid and ensure it is locked into place
  8. Pulse until finely chopped
  9. Remove the attachment from the machine
  10. Attach the Stir Tool
  11. Add vegetable oil to the Cooking Chef XL Bowl
  12. Lift the Cooking Chef head and fit the heat shield
  13. Heat with splashguard fitted until hot - 1 min, 120°C, Speed OFF
  14. Transfer content of Food processor attachment to Cooking Chef XL Bowl
  15. Add garlic purée and ginger puree to the Cooking Chef XL Bowl
  16. Cook with splashguard fitted until fragrant - 4 min, 120°C, Stir 2
  17. Then add minced lamb, peas, curry powder, tomato purée, mango chutney, salt and black pepper to the Cooking Chef XL Bowl
  18. Cook with splashguard fitted until softened - 7 min, 120°C, Stir 2
  19. Transfer content of Cooking Chef XL Bowl to baking dish
  20. Transfer potatoes to baking dish
  21. Fluff the top with a fork
  22. Bake until browned - 4 min, 180°C
  23. Remove from oven
  24. Serve
