Quiche
This French tart is the perfect starter or light lunch option.
Ingredients
Short pastry:
- 185g Flour
- 80g Butter
- 1/2 tsp Salt
- 4 Tbsp Cold water
- 1 Egg
Tart filling:
- 3 eggs
- 125ml Milk
- 125ml Double cream
- Salt & pepper to taste
- 8 Chive strands
- 100g Cheddar cheese
Method
Short pastry:
- Place 185g flour, 80g butter and 1/2 tsp salt into the bowl
- Mix until they look like breadcrumbs
- Add 1 egg and 4 Tbsp cold water and mix
- Take out the paste and wrap in cling film
- Place in the fridge to rest
- Dust your work surface with flour
- Roll out the pastry until its 3 - 4 mm thick (it will be bigger than the tart case)
- Place the pastry into the tart case, press the side right, leaving the rest of the pastry hanging over the side
- Line the tart with greaseproof paper
- Add the baking beans
- Place onto a baking tray
- Place tart in a preheated oven
- Remove the baking beans and the greaseproof paper
- Mix 1 egg then brush the pastry case
- Place back in the oven
Tart filling:
- Place all ingredients into the bowl
- Mix
- Cut the chive strands into small pieces
- Place the tart case onto a baking tray
- Place the flavouring and start mix into the pre baked tart case
- Place in the oven
- To test whether the quiche is cooked - gently wobble it, if it moves like a jelly then it is cooked
- Remove from the oven and allow to cool
