Juicy prawns seasoned with garlic ginger, chives and soy fill these flavourful dumplings; ideal for entertaining or eating alone. This recipe makes 26 dumplings so you can always freeze half before steaming to keep your freezer stocked up. To get the traditional crisp-bottomed dumpling synonymous with gyoza, heat 1 tbsp vegetable oil in a frying pan over a medium heat and fry the bottom of the dumplings until crisp, then transfer to the steaming basket and continue as instructed.

Cooking Chef XL:

  1. Add cabbage and salt to a clean bowl
  2. Mix until combined
  3. Set aside for 30 minutes to draw out excess moisture
  4. Squeeze the cabbage to remove as much liquid as possible
  5. Transfer cabbage to Cooking Chef XL Bowl
  6. Attach the Creaming Beater
  7. Add prawns, fresh chives, ginger, garlic clove, sesame oil, salt, soy sauce and potato starch to the Cooking Chef XL Bowl
  8. Lift the Cooking Chef head and fit the heat shield
  9. Mix with splashguard fitted until combined - 1 min, Speed 1
  10. Transfer mixture to bowl then set aside
  11. Sprinkle a clean baking tray with cornflour then set aside
  12. Add water to a clean small bowl
  13. Add gyoza sheets to a clean work surface
  14. Retrieve bowl with prawn mixture
  15. Spoon 1 tablespoon of the prawn mixture into the centre of each gyoza wrapper
  16. Dip your finger into the bowl of water and moisten the edge of half of the wrapper
  17. Fold the wrapper over and pinch four pleats to seal the dumpling
  18. Transfer dumplings to baking tray
  19. Repeat the same with the remaining filling and gyoza wrappers
  20. Add water to the Cooking Chef XL Bowl
  21. Grease the Steaming basket with vegetable oil
  22. Transfer dumplings to Steaming basket
  23. Attach the steaming basket
  24. Steam - 10 min, 100°C, Speed OFF
  25. Transfer dumplings to serving plate
  26. Repeat the same process with the remaining dumplings
  27. Serve with Rayu

Step 1

  1. Add cabbage and salt into a large bowl and mix to combine
  2. Let rest – 30 minutes
  3. After 30 minutes, squeeze out the liquid from the cabbage

Step 2

  1. Fit the Stir Tool
  2. Add cabbage, prawns, chives, ginger, garlic, sesame oil, salt, soy sauce and 0.5 tsp of cornflour into the appliance bowl, attach the lid 
  3. Stir – 2 minutes, speed 5
  4. Sprinkle 1 tsp of cornflour onto a baking tray
  5. Spoon 1 Tbsp of the cabbage mixture onto each wrapper
  6. Brush the edges with water
  7. Fold wrappers over and pinch four pleats to seal the dumplings
  8. Place the dumplings on the baking tray

Step 3

  1. Clean the appliance bowl 
  2. Add water into the appliance bowl up to 1L mark
  3. Grease the Steamer basket with a little oil
  4. Place dumplings into the Steamer basket
  5. Steam – 15 minutes, 104ºC

To Serve

  1. Serve with Rayu
