These light and delicious cakes are the perfect way to use up leftover egg whites. Experiment with seasonal fruits such as blueberries, raspberries and cherries.

25g All Purpose Flour
100g Caster Sugar
½ teaspoon Almond Extract
90g Egg White
1 pinch Salt
20g Icing Sugar

Method
Pre-heat oven - 200°C
Grease a clean muffin pan then set aside
Attach the Whisk
Add ground almonds, all purpose flour, caster sugar, almond extract, egg white and salt to the Cooking Chef XL Bowl
Lift the Cooking Chef head and fit the heat shield
Mix with splashguard fitted until combined - 4 min, Speed 4
Add butter to the Cooking Chef XL Bowl while machine is running
Mix with splashguard fitted - 2 min, Speed 4
Spoon content of Cooking Chef XL Bowl into muffin pan evenly
