Plum Financiers

These light and delicious cakes are the perfect way to use up leftover egg whites. Experiment with seasonal fruits such as blueberries, raspberries and cherries.
Ingredients
- 100g Butter
- 4 Plums
- 70g Ground Almonds
- 25g All Purpose Flour
- 100g Caster Sugar
- ½ teaspoon Almond Extract
- 90g Egg White
- 1 pinch Salt
- 20g Icing Sugar

- Pastry brush
- Cooking Chef XL
- Muffin pan - 12-hole
- Cooking chef xl bowl
Method
- Pre-heat oven - 200°C
- Grease a clean muffin pan then set aside
- Attach the Whisk
- Add ground almonds, all purpose flour, caster sugar, almond extract, egg white and salt to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Mix with splashguard fitted until combined - 4 min, Speed 4
- Add butter to the Cooking Chef XL Bowl while machine is running
- Mix with splashguard fitted - 2 min, Speed 4
- Spoon content of Cooking Chef XL Bowl into muffin pan evenly
- Top with plum
- Bake - 8 min, 200°C
- Bake - 8 min, 160°C
- Remove from oven and let cool - 15 min
- Dust with icing sugar
- Serve
