Pear and Walnut Bundt Cake

This cake takes a bit longer to make but is worth it. The pears and syrup stop the sponge from drying out and sweeten the cake (if your pears are already quite sweet you can leave out the maple syrup) and the creamy, nutty icing adds even more flavour.

  1. Grease and flour a clean bundt pan
  2. Pre-heat oven - 180°C
  3. Attach K Beater
  4. Add egg, muscovado sugar, vegetable oil, all purpose flour, baking powder, almond milk, maple syrup, ground ginger and nutmeg to the Kenwood Bowl
  5. Mix with splashguard fitted - 2 min, Speed 1
  6. Then add pear and walnuts to the Kenwood Bowl
  7. Mix with splashguard fitted - 30 sec, Speed Min
  8. Pour batter into bundt pan
  9. Bake - 55 min, 180°C
  10. Remove and let cool
  11. Add almond butter, almond milk, maple syrup and vanilla extract to a clean small bowl
  12. Mix until combined
  13. Drizzle cake with icing
  14. Garnish with walnuts
  15. Serve
