Panelle are delicious squares of deep-fried batter, made with nothing but chickpea flour, water, herbs, and salt. A traditional street food found in Sicily, panelle are usually served with a big squeeze of sharp lemon, or enjoyed tucked inside a crusty bread roll, the perfect hand-held snack to eat while strolling through the streets of Palermo.

Method

  1. Line a baking tray with plastic wrap
  2. Fit the Whisk Tool
  3. Add the ingredients into the appliance bowl, fit the splashguard
  4. Mix - 1 minute, speed Min
  5. While the machine is running, slowly pour water into the appliance bowl
  6. Mix until smooth – 4 minutes, speed 1
  7. Cook until the mixture pulls away from the inside of the bowl - 15 minutes, 120ºC, speed Stir 1
  8. Pour the mixture into the baking tray and level with a spatula
  9. Let cool completely – 1 hour
  10. Line a plate with paper towels
  11. Remove the chilled tray from the fridge and cut the mixture into 24 squares
  12. Add oil into a large, heavy-base pot, filling no more than 1/3 full
  13. Heat until the oil reaches 180ºC
  14. Working in batches of 2-4, fry the panelle until golden and crisp – 3 minutes, medium-high heat
  15. Transfer the fried panelle onto the lined plate
  16. Repeat the same with the rest
  17. Serve with lemon wedges
