This apple tart (Tarte Normande) is a French dessert that features signature ingredients from the northern region of the country, Normandy. Apples, butter and calvados, a type of brandy, are combined together in a delicious dessert that is as simple to make as it is elegant to look at. You can omit the brandy for an alcohol-free version.

Method

  1. Attach Creaming beater
  2. Add plain flour and butter to the Kenwood Bowl
  3. Mix with splashguard fitted - 1 min, Speed 1
  4. Then add egg and caster sugar to the Kenwood Bowl
  5. Mix with splashguard fitted - 1 min, Speed 1
  6. Transfer dough to work surface
  7. Wrap with plastic wrap
  8. Chill in fridge - 20 min
  9. Clean Kenwood Bowl
  10. Attach Creaming beater
  11. Add butter, caster sugar, ground almonds, egg and brandy to the Kenwood Bowl
  12. Mix with splashguard fitted then set aside - 2 min, Speed Max
  13. Pre-heat oven - 200°C
  14. Retrieve the chilled pastry from the fridge
  15. Transfer pastry to lightly floured surface
  16. Roll out until 2mm thick
  17. Transfer pastry to tart tin
  18. Trim
  19. Pour content of Kenwood Bowl into pastry
  20. Spread evenly then set aside
  21. Add red apple to the pastry
  22. Bake then reduce heat - 15 min, 200°C
  23. Bake until golden brown - 30 min, 180°C
  24. Remove from oven and let cool
  25. Add apricot jam and lemon to a clean heatproof bowl
  26. Microwave until hot
  27. Retrieve the tart
  28. Brush pastry with glaze
  29. Remove from the tin once the tart is cool
  30. Serve
