Ingredients

Dough
•    280g plain flour
•    38g caster sugar
•    7g fast-acting dried yeast
•    170ml milk
•    40g butter

Filling
•    70g butter, soft
•    35g brown sugar
•    1.5 tbsp mixed spice 
•    1 egg for egg wash

Glaze
•    200g icing sugar
•    1 lemon, juiced
 

Method

• Into the bowl of a your Kenwood Go stand mixer, fitted with a dough hook attachment, add the flour, sugar, fast action yeast, milk and mix for 5 minutes to form a dough.
• To this dough, add the butter and mix for 8-10 mins, until the dough is smooth & shiny.  
• Place this into a greased bowl, cover with a kitchen cloth and leave somewhere warm and prove until doubled in size.
• Once proved, roll the dough out on a lightly floured work surface into a rectangle measuring 8” x 12”.
• For the filling, mix the soft butter, sugar and mixed spice. Spread this on the rectangle of dough, leaving a 1” border around the edge.
• From the long side, roll up as you would a Swiss Roll.
• Slice the long roll into 6 equal pieces.
• Arrange these in a greased and lined 8” round baking dish. 
• Cover and leave to prove until doubled in size again.
• Preheat your oven to 200C/180C fan.
• Carefully egg wash the proved dough and place in the oven to bake for 15-20minutes or until golden brown all over.
• Remove and allow to cool.
• To make the icing, simply add enough lemon juice to the icing sugar to form a sticky icing.
• Drizzle this over the cooled buns and serve.
