These festive treats are a modern twist on the classic mince pie and a great way to add mincemeat into your holiday baking. Spiced sponge filled with fruity mincemeat and finished with a lavish brandy buttercream.

  1. Pre-heat oven - 180°C
  2. Line a clean cupcake pan
  3. Attach Creaming beater
  4. Add butter and caster sugar to the Kenwood Bowl
  5. Mix - 3 min, Speed 5
  6. Add egg to the Kenwood Bowl gradually while machine is running
  7. Mix - 2 min, Speed 1
  8. Then add plain flour, mixed spice and baking powder to the Kenwood Bowl
  9. Mix until combined - 1 min, Speed 3
  10. Spoon mixture into cupcake pan
  11. Bake until skewer tests clean - 20 min, 180°C
  12. Remove from oven and let cool
  13. Using a cupcake corer or sharp knife, cut the centre of each cupcake
  14. Fill with mince pie filling then set aside
  15. Clean Kenwood Bowl
  16. Attach Creaming beater
  17. Add butter to the Kenwood Bowl
  18. Mix until light and fluffy - 3 min, Speed 4
  19. Then add icing sugar to the Kenwood Bowl
  20. Mix until smooth - 3 min, Speed 3
  21. Then add brandy to the Kenwood Bowl
  22. Mix until combined - 30 sec, Speed 1
  23. Transfer buttercream to piping bag
  24. Pipe buttercream onto cupcakes
  25. Decorate with sprinkles
  26. Serve
