Feta and Mint Scones

A savoury version of the British classic.
Ingredients
- 350g (12oz) self- raising flour, sifted
- 7.5ml (11/2 tsp) baking powder
- pinch of salt
- 75g (3oz) butter, room temperature
- 60ml (4 tbsp) fresh chopped mint
- 150g (5oz) feta cheese, crumbled
- 1 egg
- 150ml (1/4 pt) milk
Method
- Preheat the oven to 220°C, 425°F, Gas Mark 7. Place the flour, baking powder, salt and butter in the bowl. Fit the dough hook and blend on speed 1 for 1 minute, until well combined.
- Add the remaining ingredients and blend on speed 1 for 1 minute, until well combined and formed into a soft dough.
- Turn out onto a floured surface, knead lightly and roll to 1cm (1/2 in) thick. Using a 6cm (2 1/2 in) round cutter, cut out 12 -14 circles. Place on a lightly oiled baking sheet well spaced apart and bake for 10 -15 minutes, until well risen and golden. Serve warm with butter.
