This rich, sticky cake can be enjoyed with or without butter.
Ingredients
300g Water
1 Orange
2 Eggs
25g Orange Peel
2 Earl Grey Teabags
250g Dried Mixed Fruit
250g Muscovado Sugar
275g Cake Flour
2 ½ teaspoons Baking Powder
1 teaspoon Mixed Spice
¼ teaspoon Salt
50g Granulated Sugar
3 tablespoons Orange Juice

Loaf pan - 8 x 4 x 2.5"

Kenwood bowl - kenwood chef
Method
Line a clean loaf pan with parchment paper
Pre-heat oven - 180°C
Add earl grey teabag, water and dried mixed fruit to a clean jug
Let rest - 5 min
Discard the tea bags but keep the fruit and water
Attach K Beater
Add muscovado sugar, cake flour, baking powder, mixed spice, salt and orange to the Kenwood Bowl
Pour content of jug into Kenwood Bowl
Mix - 2 min, Speed 1
Then add egg to the Kenwood Bowl
Mix - 2 min, Speed 1
Transfer batter to loaf pan
Bake - 1 hr, 180°C
Add granulated sugar, orange peel and orange juice to a clean saucepan
Heat gently until the sugar is dissolved
Take the saucepan off the heat and let cool slightly
Add granulated sugar to the saucepan
Stir with tablespoon until combined
Spoon the glaze over the still warm cake whilst in the tin
Let cool
Serve
