These cute and tasty biscuits look adorable on the tree or as hanging decorations around the house they are so jolly! They also make lovely gifts.

For the biscuits:

  1. Preheat the oven to 180C. and line your tray/s with parchment paper.
  2. Beat the sugars, butter and vanilla together until combined.
  3. Add the egg and beat in until combined.
  4. Mix the spices into the flour to distribute, then add the flour to the bowl and beat on slow until just combined. Tip out onto the surface and bring them together into a ball.
  5. Roll out to an even thickness of approximately 5mm (use marzipan spacers/guide sticks to ensure all cookies are exactly the same, so they bake evenly and look neater if you have them)
  6. Cut out the snowflakes and place them onto the parchment-lined trays leaving a couple of cm between each one.
  7. Bake for 12-15 mins until they turn a darker golden brown and are firm to the touch. Leave to cool on the trays for 5 minutes, then transfer to a wire rack to cool completely.

To decorate:

  1. When ready to ice, pipe over the cookies to create the snowflake effect and leave them to dry before wrapping and tying them with ribbon. These biscuits last for up to a month if well-wrapped, so you can make them well in advance of Christmas if you want to get ahead.

Chef's Notes:

  1. Makes approx. 50-60 subject to sizes, bag up in batches of 5 or 7 for the perfect treat size bag. Half this batch if you only wish to make a few gift bags.
