1. To prepare, preheat the oven to 180°C and line a swiss roll tin with parchment paper.
2. Attach the 5L Mixer bowl to the machine
3. Add the egg, sugar and vanilla into the mixer bowl, then fit the whisk tool.
4. Start the machine on speed to 6 for 3 minutes, then add the flour, cocoa and baking powder into the mixer bowl.
5. Start the machine on speed 2 for 1 minute.
6. Pour the batter to the prepared swiss roll tin and bake for 12 minutes at 180°C.
7. Once baked, remove from the oven and allow the cake to cool slightly.
8. Lay a piece of parchment paper on a work surface, then turn out the cake onto the paper and remove the previous sheet of parchment.
9. Carefully roll the cake into a log from the shorter side up and leave to cool.
10. Clean the 5L Mixer bowl and attach to the machine, then fit the Whisk.
11. Add the whipping cream, icing sugar, vanilla extract and liqueur. Start the machine on Min speed then increase to Speed 5 for 2 minutes 30 seconds.
12. Unroll the cooled cake and spread the cream filling onto the cake.
13. Scatter the raspberries over the cream, then roll the cake back up into a log.

19. Mix on speed 5 for 30 seconds or until the mixture thickens and the whisk starts to leave indentations in the ganache.
20. Use a spatula to spread the chocolate ganache over the cake, then run a fork down the cake log to make the marks to resemble a log.
21. To decorate, add a few fresh cranberries or raspberries, and a light dusting of icing sugar.
22. Refrigerate until ready to serve.
