Chicken, Sweet Potato and Coconut Curry

A sweet and creamy chicken curry with sweet potato and spinach. Serve with rice and naan bread.
Ingredients
- 15g Ginger
- 100g Onion
- 600g Chicken Thigh
- 300g Sweet Potato
- 2 tablespoons Oil
- 2 Garlic Cloves
- 2 tablespoons Curry Powder
- 20g Red Lentils
- 200g Chicken Stock
- 400ml Coconut Milk
- 100g Spinach
- Salt & Pepper as needed

Method
- Attach the Stir Tool
- Add oil to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Cook with splashguard fitted - 1 min, 110°C, Stir 1
- Then add garlic clove, ginger, curry powder and onion to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 4 min, 110°C, Stir 1
- Then add chicken thighs to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 5 min, 120°C, Stir 1
- Then add sweet potato and red lentils to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 5 min, 110°C, Stir 1
- Then add chicken stock and coconut milk to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 20 min, 104°C, Stir 1
- Then add spinach and salt & pepper to the Cooking Chef XL Bowl
- Mix with splashguard fitted - 2 min, Stir 1
- Serve
