Cantonese steamed fish is often served as one of the courses at a Chinese banquet on Chinese New Year due to the belief that it will bring prosperity. Fish is a symbolic gesture of hope for long-lasting prosperity and a wish that the year will begin and end with a surplus of money. It's also a quick and easy meal to make on any weeknight at home with just a few ingredients.

Method

Step 1

  1. Grease the Steamer basket with a little oil
  2. Add water into the appliance bowl
  3. Add cod fillets into the Steamer basket, fit the splashguard
  4. Steam - 10 minutes, 110ºC, speed off 
  5. Tip: Or use the Steam preset if applicable
  6. Carefully transfer the steamed fish onto a serving plate
  7. Top with spring onions, ginger and fresh coriander

Step 2

  1. Clean the appliance bowl and fit the Stir Tool
  2. Add salt, granulated sugar, light soy sauce, hot water, sesame oil, vegetable oil into the appliance bowl, fit the splashguard
  3. Cook – 30 seconds, 110ºC, speed Stir 1
  4. Carefully pour the sauce over the fish
  5. Serve
