Amaretti Biscuits

A simple combination of egg whites, ground almonds and sugar, flavoured with vanilla and Amaretto, resulting in a gluten-free biscuit with a delightfully chewy texture. Crush them to make a delicious base for a rich chocolate tart or crumble them over ice cream for a quick dessert.




  1. Pre-heat oven - 150°C
  2. Line a clean baking sheet with parchment paper
  3. Attach K Beater
  4. Add ground almonds, caster sugar and baking soda to the Kenwood Bowl
  5. Mix until combined - 2 min, Speed 3
  6. Then add egg white, vanilla extract and amaretto to the Kenwood Bowl
  7. Mix then scrape bowl - 30 sec, Speed 5
  8. Mix - 30 sec, Speed 5
  9. Transfer the contents of the mixer bowl into a piping bag.
  10. Cut a 1.5 cm hole the end of the bag.
  11. Pipe evenly spaced 2.5 cm rounds of the mixture onto the prepared baking tray.
  12. Use a damp pastry brush or finger-tip to get a smooth top.
  13. Dust with icing sugar
  14. Bake - 20 min, 150°C
  15. Let cool on round wire rack
  16. Serve
