A classic British dessert, Victoria Sponge Cake is a light and fluffy two-layer sponge filled with raspberry jam and whipped cream, dusted with powdered sugar.

Method

For the cake:

  1. Cut the butter into cubes
  2. Add the ingredients to the bowl
  3. Beat until it becomes light and fluffy, scrapping down the sides regularly
  4. Add self-raising flour to the bowl
  5. Add 4 eggs to the bowl
  6. Line cake tin with greaseproof paper
  7. Spread the filling evenly on top
  8. Place in a pre-heated oven
  9. Once the cake have cooked take them out and leave to cool

For the filling:

  1. Place all ingredients into the food processor
  2. Turn the cakes over to expose their underside
  3. Spread the jam over one half
  4. Spread the filling over the other half
  5. Sandwich both halves together
  6. Dust the remaining icing sugar over the top
