Victoria Sponge Cake
Ingredients
For the cake mix:
- 200g Softened butter
- 200g Castor sugar
- 200g Self-raising flour
- 1 tsp Baking powder
- 4 Eggs
For the filling:
- 100g Softened butter
- 140g Icing sugar
- 1/4 tsp Vanilla extracts
- 300g Strawberry jam
Method
For the cake:
- Cut the butter into cubes
- Add the ingredients to the bowl
- Beat until it becomes light and fluffy, scrapping down the sides regularly
- Add self-raising flour to the bowl
- Add 4 eggs to the bowl
- Line cake tin with greaseproof paper
- Spread the filling evenly on top
- Place in a pre-heated oven
- Once the cake have cooked take them out and leave to cool
For the filling:
- Place all ingredients into the food processor
- Turn the cakes over to expose their underside
- Spread the jam over one half
- Spread the filling over the other half
- Sandwich both halves together
- Dust the remaining icing sugar over the top
