A great way to use stale bread and turn it into a delicious treat. Bread is the most wasted in items in our homes and believe me when you make this cake you’ll never waste a slice again
Ingredients
- 400g stale bread
- 10g baking powder
- 140g brown sugar
- 60 cocoa powder
- 2 lrg free range eggs
- 100g chocolate pieces
- 300ml milk
- Tsp. vanilla extract
For the ganache:
- 300g chocolate
- 300ml full fat cream
Method:
- Break the bread into pieces and put in a blender, blend until it becomes bread crumbs
- Add the sugar, cocoa powder, baking powder and pulse until mixed through.
- Add the eggs, vanilla and milk, blend until it becomes a cake batter
- Add to an 8” cake tin, sprinkle over the chocolate pieces and bake at 150 degrees for 20 minutes
- Allow to cool completely on a rack
- Slowly heat your cream (but don’t let it boil)
- After 2 minutes, pour the cream over the chocolate and let sit for 2 minutes
- Slowly whisk the cream and chocolate until totally combined, allow to cool to room temperature
- pour the ganache over the cake until completely covered. Place in the fridge to set.
- Garnish with fresh berries and enjoy
