Jam is a product made with whole fruit, cut into pieces or crushed. The fruit is heated with water and sugar to activate the pectin in the fruit. The mixture is then put into containers to set and can be spread on toast or used in cakes.

  1. Put the halved strawberries in the bowl, attach the Stirring Tool and lower the head. Fit the Splashguard, set the temperature to 90ºC and the speed to stirring speed 1. Cook gently for 15 minutes.

  2. Turn the temperature off and add the sugar and lemon juice. Reset to stirring speed 1 for 5 minutes until the sugar has dissolved.
    Time: 5 mins | Temperature: 0ºC | Speed: 1
  3. Set the temperature to 120ºC and reset the speed to stirring speed 1, boil for 10 minutes.

  4. Reduce the temperature to 105ºC and continue to cook on stirring speed 1
    Time: 45 mins | Temperature: 105ºC | Speed: 1
  5. If your setting point has not been reached, boil the content for a further 10 minutes. Pour into sterilised jars and leave to cool.

Setting point: The setting point is the most important part of preserving. To check, once the setting temperature has been reached, placed a drop of the mix on a chilled place. Leave it for one minute and then push the surface of the jam. If the skin wrinkles, then it has reached setting point. If not, continue to cook for a few more minutes.
