Spinach and Herb Pancakes with Smoked Salmon

Serve these pancakes for a Father's Day breakfast. For the herbs, we have used just coriander, but you can use basil, sage or a mixture of all 3.

  1. Fit max blade to kCook bowl
  2. Add cake flour, egg, milk and butter to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Mix with filler cap fitted - 30 sec, speed 12
  6. Then add baby spinach, cilantro and sea salt to the batter
  7. Mix with filler cap fitted - 30 sec, speed 12
  8. Add butter to a clean frying pan
  9. Heat in frying pan - medium-high heat
  10. Ladle batter into frying pan bit by bit
  11. Fry each side in frying pan until cooked through - approx 5 min
  12. Transfer content of frying pan to serving plate
  13. Spread with cream cheese
  14. Top with smoked salmon
  15. Garnish with fresh chives
  16. Serve
