A twist on the classic strawberry daiquiri, this festive recipe sees ripe plums stewed down in a lightly spiced syrup and mixed with freshly squeezed orange juice and plenty of white rum for an irresistible winter cocktail.

Method

  1. Attach the Stir Tool
  2. Add water, sugar, plum, ground ginger, mixed spice and ground cinnamon to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted until syrupy - 10 min, 105°C, Stir 2
  5. Transfer mixture to medium bowl
  6. Let cool completely - 1 hr
  7. Add ice, white rum and orange juice to a clean cocktail shaker
  8. Transfer content of medium bowl to cocktail shaker
  9. Shake well
  10. Strain mixture into 8 drinking glasses
  11. Garnish with orange peel
  12. Serve
