Traditional shortbread, short and sweet.
Ingredients
225g Salted Butter
110g Caster Sugar
225g Gluten-Free Flour
110g Cornstarch
2 tablespoons Water
2 teaspoons Caster Sugar

Rolling pin

Silicone baking mat
Baking sheet - 18 x 13"
Kcook bowl
Method
Pre-heat oven - 180°C
Fit midi blade to kCook bowl
Add salted butter and caster sugar to the kCook bowl
Fit kCook bowl to kCook Multi
Attach lid to kCook bowl with filler cap fitted
Blend with filler cap fitted - 2 min, speed 10
Then add gluten-free flour and cornstarch to the kCook bowl
Blend with filler cap fitted - 2 min, speed 6
Then add water to the kCook bowl
Mix with filler cap fitted - 2 min, speed 8
Turn out on lightly-floured surface
Knead
Roll out until 1 cm thick
Cut into rectangles with chef's knife
Prick an indentation
Place onto silicone baking mat
Sprinkle with caster sugar
Chill in fridge - 30 min
Bake until light golden - 13 min, 180°C
Transfer onto cooling rack until completely cool
Serve
