Ingredients
1 cucumber
1 green pepper, cut to fit the feed tube
1 red onion
4 medium tomatoes
3 spring onions, finely chopped
Handful of flat leaf parsley, coarsely chopped
2 Tbsp Extra virgin olive oil
Juice of ½ lemon
1tsp ground sumac
Salt and pepper to taste
Method
Fit the drive shaft and bowl onto the power unit.
Add the dicing disc and fit the lid.
Fit the dicing grid into the feed tube.
With the machine running at max speed, use the Express DiceTM pusher to push the cucumber, green pepper, red onion and tomatoes through the dicing grid - place both hands on top of the pusher and press down firmly.
Work in batches, transferring the contents of the processor bowl into a large mixing bowl as necessary.
Using the knife blade, finely chop the spring onions and parsley.
Combine the cucumber, tomatoes, spring onions and parsley in a medium mixing bowl.
Add the olive oil and lemon juice, season with salt and pepper and mix well.
Transfer to a serving dish, then sprinkle the ground sumac over the top.
