This recipe uses the steamer tray attachment to steam the Sea Bass on a bed of sliced fennel and red onion, drizzled with orange juice and wrapped in paper to form a parcel, this really is a delicious way to enjoy fresh fish. Try this technique using other fillets of fish.

  1. Fit thin slicing disc (4) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Line a clean work surface with parchment paper
  4. Add sea bass to the work surface
  5. Sprinkle with orange juice
  6. Drizzle with olive oil
  7. Season with salt & pepper
  8. Turn direct prep attachment to position 2
  9. Slice fennel bulb and red onion into a clean medium bowl with direct prep attachment
  10. Transfer vegetables to parcels
  11. Fold tightly
  12. Transfer parcels to steamer tray
  13. Fit kCook bowl to kCook Multi
  14. Add water to the kCook bowl up to the 1 litre mark
  15. Attach lid to kCook bowl
  16. Steam with filler cap removed - 15 min, 104°C
  17. Serve
