The Savoy cake is a very light cake obtained by the delicate addition of whipped egg whites, which gives it a soft texture, accompanied by a zest of citrus fruit to enhance the taste.

Method

  1. Pre-heat oven - 210°C
  2. Grease a clean bundt pan
  3. Add egg yolk, caster sugar and lemon to a clean bowl
  4. Whisk until combined then set aside
  5. Attach Whisk
  6. Add egg white to the Kenwood Bowl
  7. Mix with splashguard fitted - 1 min, Speed Max
  8. Add caster sugar to the Kenwood Bowl gradually while machine is running
  9. Mix with splashguard fitted - 3 min, Speed Max
  10. Retrieve the egg yolk mixture
  11. Fold cornstarch into the bowl gently
  12. Fold meringue into egg mixture gently
  13. Pour mixture into bundt pan
  14. Bake then reduce heat - 6 min, 210°C
  15. Bake - 30 min, 120°C
  16. Remove from oven and let cool
  17. Turn out onto cooling rack until completely cool
  18. Dust with icing sugar
  19. Serve
