Raspberry Coulis

A great accompaniment to cakes, ice cream or puddings.
Ingredients
- 250g (9oz) raspberries, fresh or frozen defrosted
- 15-30 ml (1-2 tbsp) icing sugar
- dash of liqueur e.g. framboise, kirsch or cointreau, optional
Method
- Place the fine screen from the Colander and Sieve rough side uppermost, in the bowl carrier and place in the Kenwood Bowl.
- Add the raspberries and icing sugar and sieve on speed 1-2. Remove the screens and stir in the liqueur, if using.
- Serve cold with desserts, ice creams and gâteaux.
