A creamy coconut and raspberry frozen dessert. Serve with chopped pistachios and fresh raspberries.

  1. Grease 10 clean Dariole moulds
  2. Attach the Creaming Beater
  3. Add thickened cream, sugar and canned coconut milk to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat with splashguard fitted - 10 min, 95°C, Stir 1
  6. Strain content of Cooking Chef XL Bowl into bowl
  7. Cover with plastic wrap and let cool
  8. Clean Cooking Chef bowl
  9. Attach the Creaming Beater
  10. Add raspberries and water to the Cooking Chef XL Bowl
  11. Heat with splashguard fitted until softened - 5 min, 104°C, Stir 1
  12. Push content of Cooking Chef XL Bowl into bowl
  13. Clean Cooking Chef bowl
  14. Attach the Creaming Beater
  15. Transfer content of bowl to Cooking Chef XL Bowl
  16. Mix with splashguard fitted until combined - 2 min, Speed 1
  17. Divide mixture between 10 Dariole moulds evenly
  18. Freeze until set - 3 hr
  19. Serve
