This Japanese caramel custard pudding is known as “Purin” and it is like the classic creme caramel or flan. Purin calls for only a few ingredients and is easy to make. No special oriental ingredients or equipment is required to make this treat. Anyone outside of Japan can easily make these delicious Japanese sweets right at home!

Method

  1. Add caster sugar and water to the Cooking Chef XL Bowl
  2. Cook with splashguard fitted until light golden - 8 min, 180°C, Speed OFF
  3. Pour mixture into 4 Dariole moulds then set aside
  4. Add egg, caster sugar and vanilla extract to a clean medium bowl
  5. Whisk until pale and light then set aside
  6. Add milk to the Cooking Chef XL Bowl
  7. Cook with splashguard fitted until hot - 5 min, 80°C, Speed OFF
  8. Remove the bowl from the machine
  9. Add silver leaf gelatin sheet to the Cooking Chef XL Bowl
  10. Let rest until dissolved - 1 min
  11. Pour content of Cooking Chef XL Bowl into medium bowl
  12. Whisk until combined
  13. Strain mixture into jug through a sieve
  14. Pour content of jug into 4 Dariole moulds
  15. Chill in fridge - 6 hr
  16. Retrieve the chilled Purin from the fridge
  17. Transfer content of Dariole moulds to serving plate
  18. Serve
