Potato Salad

Can be served as a starter or side dish.
Ingredients
- 900g (2lb) new potatoes
- salt and freshly ground black pepper
- sprig of mint
- 6 sprigs fresh parsley
- 1 small onion, quartered
- 150ml (¼ pint) mayonnaise
- 5ml (1 tsp) Dijon mustard
- 30ml (2 tbsp) white wine vinegar

Method
- Place the potatoes in the Potato Peeler and use to just clean the potatoes, do not allow it to get to the peeling stage.
- Place the potatoes in a large pan, cover with cold salted water, add the sprig of mint, and bring to the boil. Cover and simmer for 10-12 minutes, or until tender.
- Place the parsley and onion in the Multi-Mill and process until chopped. Mix into the mayonnaise with the mustard and vinegar and then season with salt and freshly ground black pepper.
- Drain the potatoes and leave to cool slightly. Cut in half and toss with the mayonnaise dressing. Serve at room temperature.
