Method

  1. Place the potatoes in the Potato Peeler and use to just clean the potatoes, do not allow it to get to the peeling stage.
  2. Place the potatoes in a large pan, cover with cold salted water, add the sprig of mint, and bring to the boil. Cover and simmer for 10-12 minutes, or until tender.
  3. Place the parsley and onion in the Multi-Mill and process until chopped. Mix into the mayonnaise with the mustard and vinegar and then season with salt and freshly ground black pepper.
  4. Drain the potatoes and leave to cool slightly. Cut in half and toss with the mayonnaise dressing. Serve at room temperature.
