Potato rosti

Crispy Swiss-style potato pancake, grated and pan-fried to golden perfection.
Ingredients
- 2 large Maris Piper or King Edward potatoes
- 1 tbsp cornflour or potato flour
- 2 tbsp melted butter
- Salt and pepper

- Kitchen Machine
- Food processor with thick grating disc
Method
- Peel the potatoes
- Attach either one of the below to your machine;
• Food processor with thick grating disc
• Continuous slicer/grater with the thick grating disc
• Rotary slicer/grater with the thick grating drum - Grate the potato and set aside in a bowl.
- Add the cornflour, butter, salt and pepper and mix well with a wooden spoon.
- Shape into flat round discs approximately 8cm in diameter and 2cm tall (the mixture should make 4).
- Heat a pan with a little butter and fry gently for about 4 minutes on each side until golden and cooked through.
