Peach Mango Galette by Shane Smith

Ingredients
Pastry
- 180g plain flour
- 2 tsp caster sugar
- Pinch salt
- 150g cold butter
- 1 lemon zest
- 3-4 tbsp cold water
Filling
- 8 fresh peaches, cut into wedges
- 2 fresh mango, diced
- 2 tbsp honey
- 1 egg for egg wash
- 2 tbsp brown sugar
Method
- For the pastry, into the Kenwood kMix filled with the paddle attachment, add the flour, salt and sugar.
- Mix until the texture resembles a breadcrumb consistency.
- At this point add the lemon zest and enough cold water to help the pastry come together.
- Wrap and chill this dough for 30 minutes.
- Preheat the oven to 180C/160C fan.
- Into a bowl add the peaches, mango and honey and toss together.
- On a floured surface, roll the dough to about 12"–14" round.
- Roll dough onto your pin, then unroll it onto a sheet of parchment paper.
- Carefully lift onto a baking tray and arrange fruit mixture in the centre, leaving a 3" border.
- Fold edges of dough up and over fruit creating a pleated design.
- Egg wash the edge of pastry and sprinkle the brown sugar over the dough.
- Place the galette in oven and bake for 40-45 minutes.
- Once baked, leave to cool for 35 minutes before serving.
- Pair with a side of semi whipped cream or Ice-cream.
